This is a beautiful way of cooking eggplant. It is quite exotic and a work of art. My wife loves this dish.

- 1 whole eggplant
- 8 oz goat cheese
- 1 tablespoon tomato paste
- 1 cup Cream, fluid, heavy whipping
- 1 tablespoon kahlua
- 1/2 cup walnuts

Pre heat oven to broil
With a fork puncture eggplant all around. Place eggplant on cookie sheet. Broil for around 10 to 15 minutes. When eggplant skin begins to get blistery take out of oven and cut into 12 slices. Add 4 slices to baking pan side by side. Spread tomato paste over each one. Add slice of goat cheese. Add another eggplant on top to all the others. Repeat with the tomato paste layer and goat cheese layer.

Pre heat oven to 350
Place carton of fresh cream into bowl. Add the Kahlua and mix.
Pour mixture over eggplant. Garnish with walnuts. Bake for 30 minutes cover with foil.
