When I lived in Mexico City in the seventies this dish was very popular. My dear friend Diane showed me this recipe. I love the combination of olive oil, garbanzo beans and spinach together. This is a very healthy soup.

- 2 cups chicken stock
- 3 tortilla corn tortillas cut into triangles
- 1 dash salt
- 1/4 teaspoon pepper
- 1/4 cup olive oil
- 10 sprigs fresh cilantro diced fine
- 2 cups cooked garbanzo beans
- 1 tablespoon olive oil
- 2 cups fresh spinach
Recipe
Add stock to pot. Add salt, pepper and olive oil. Add the garbanzo beans and spinach. Cook for 10 minutes.
Add fried tortilla strips to soup. Garnish with fresh cilantro. Serve
