This condiment is used in Ethiopian cooking. It’s the same process for making Indian ghee but in Ethiopia they put in spices while making the ghee. While living in Hawaii I had some friends from Ethiopia who showed me how to make this. I love this condiment because all you need is a tablespoon of ghee and all of your spices are included. Just add your vegetables and presto your meal is done. The original quick and easy meal. |
Ingredients
- 2 stick butter
- 1/8 teaspoon nutmeg
- 3 cloves garlic
- 1 teaspoon cinnamon
- 1 teaspoon cardamom
- 1/2 teaspoon turmeric
- 2 teaspoons diced ginger
- 3 cloves diced garlic
- 1/2 medium onion diced
Recipe
Melt the butter in a sauce pan over medium heat. Melt butter and bring to a simmer. You will hear crackling sounds when the butter is simmering.
Add all the spices above.
The ghee is done when the crackling subsides. This means most of the moisture has been cooked away. The ghee becomes a clear golden yellow liquid. The milk solids separate and settle in the bottom of the pan, and are brown in color.

When ghee is done take out the garlic and ginger. I usually use put these in a Dahl that I ’m going to make.
Pour ghee into clean glass jar. Let it cool and then put a lid on it.
