Ingredients
Sauce
- 12 large shrimp
- 1 whole chipotle peppers in adobo sauce
- 1 cup spinach
- 1 cup mushrooms
- 1 tablespoon olive oil
- 1 tbsp Vanilla
- 4 tablespoons sour cream
Quesadilla
- 1 cup, shredded cheddar cheese
- 4 tortilla corn tortillas
Garnish
- 1 cup alfalfa sprouts
Recipe
Make sauce
Heat up pan. Add the olive and vanilla. When hot add the shrimp, mushroom, spinach and chipotle peppers in adobo sauce.
Put lid on pan and simmer for around 10 minutes until shrimp and vegetable are cooked.
Take off burner. Add the sour cream and serve.
Quesadilla
Preheat oven to 350. Sprinkle the cheese over the corn tortillas. Place in oven for 7 minutes until cheese is melted.
Spoon the shrimp mixture over the corn tortillas. Garnish with sprouts.
