My dear friend Todd gave me these trout when he went on a fishing trip to Arkansas. This a different way to cook trout. |
Ingredients
- 4 fillet trout
- 12 spear tip (2" long or less) Asparagus | Asparagus spears
- 1`tablespoon olive oil
- pinch of salt
Recipe
Preheat oven to 375.
Fillet the trout.
Brush the olive oil in a glass pan. Place the fish in the pan.
Use store bought chipotle peppers in adobo sauce or homemade http://whatscookingtreasures.com/Home/Display?row=662.
Place the adobo sauce over the fish and stuff inside the fish.
Place in oven and bake for 20 minutes. When time is up place the asparagus next to the trout fillets. Add the lemon juice and cover the dish. Bake for another 10 minutes.
