I first made this dish in New York City in the seventies. I love this dish. I had this this probably a 100 times since then. This is the filling for Spanakopita(Greek spinach pie). There are many variations for this recipe. This one is very simple. |
Ingredients
- 1 bunch fresh spinach
- 2 whole fresh Lemon juice
- 3 cloves garlic diced fine
- 1 medium onion diced fine
- 1 cup diced feta cheese
- 28 large olives
- 1 tablespoon olive oil
Recipe
Sauté in olive oil the onion, garlic, salt and pepper until the onion becomes clear. Add the spinach. Cook until spinach is wilted. Take off burner. Add fresh lemon juice, olives and feta cheese.
