This is a great way to cook your chicken Mexican style.

Ingredients

  • 1 breast, bone removed chicken breasts
  • 1/2 cup diced tomatoes
  • 1 teaspoon coconut oil
  • 1 large zucchini
  • 1 whole chipotle peppers in adobo sauce
  • 1/2 teaspoon vanilla
 

Recipe

Heat up pan. Add coconut oil and sauté zucchini until done. Add chicken and sauté on both sides. Add the tomatoes, chipotle peppers,  adobo sauce, and the vanallia. Sauté for a few minutes and serve.
