This is India’s version of rice pudding. Try it. I’m sure you will like it. I first had this in India in the seventies. I loved it. It is definitely comfort food.
 

  • 1/2 cup basmati rice
  • 6 cups whole milk
  • 1 teaspoon ground cardamom
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract or 1 teaspoon  rosewater
  • 1/4 cup pistachios
 

Recipe

Crush cardamom seeds.
Add milk, cardamom seeds, sugar and rice to pot.
On medium flame stir constantly until milk mixture become thick and rice is done. this should take around 50 minutes.
When rice is done add chopped pistachios or almonds. Add raisins.
Just before serving add the rosewater or vanilla.
