Chile has some of the best wines on the planet. Estofado de Pollo is a chicken and vegetable simmered in wine. It’s very easy to make and delicious.


  • 1 large onion
  • 2 cloves garlic
  • 1 large red pepper
  • 1 cup mushrooms
  • 4 thigh with skin chicken thigh
  • 12 fl oz Chardonnay | Chardonnay wine
  • 1 tablespoon olive oil


Heat up pan. Add olive oil. When oil is hot add the chicken thighs. Sauté on both sides for a few minutes. Take out of and set aside. Add the onions and garlic. Sauté for a few minutes until onion are translucent. Add the rest of the vegetables. Sauté for a few minutes. Add the wine. Cover the pan and simmer for around 20 to 25 minutes until chicken is cooked.
