Potato Subji

Ingredients

  • 1 cup water
  • 3 large potato diced
  • 1 medium tomato
  • 1/4 tablespoon fresh ginger
  • 3 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon cayenne
  • 1 medium onion
  • 3 cloves garlic
  • pinch of salt
  • 1 tablespoon cumin seeds
  • 1 medium cauliflower diced
  • 1 cup green pepper diced

Instructions

 
Cut up potatoes, cauliflower and green peppers into cubes.
 
Put in blender onion, garlic, tomatoes, fresh ginger water and spices. Blend for twenty seconds or until mixture is smooth.
 
Heat Ghee (clarified Butter) or Butter in Pan. Add cumin seeds to Pan. Let seeds pop. At this point add the blended mixture. Cook at a medium temperature for a few minutes stirring constantly. Add your chopped potatoes cauliflower, and green peppers. Add approximately one cup of water. Put lid on pan and simmer for about 20 minutes. Add salt. Be sure to stir this subji every so often so it doesn’t burn. This dish is done when the vegetables are well cooked not crunchy.

This is another dish I learned how to make in India. I have made this probaly a thousand times. My family loves it.
