Indian style tofu

Ingredients

  • 1 cup water
  • 1 block of fresh tofu
  • 1 medium tomato
  • 1/4 tablespoon fresh ginger
  • 3 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • 1 teaspoon cayenne
  • 1 medium onion
  • 3 cloves garlic
  • dash of salt
  • 1 tablespoon cumin seeds
  • 1/2 cup mushrooms
  • 2 cups peas

Instructions

 
Mash tofu or cut tofu into cubes.
In blender put 1 water, tomato, ginger, turmeric, coriander powder, cumin powder, garam masala, cayenne, onion, garlic and salt.
Blend until smooth.
In large frying pan put 1/4 cup ghee in pan.
Turn heat to medium. Put in cumin seeds. When they starting popping after 15 seconds or so add the blender mixture.
 
Cook for a few minutes then add the mushrooms, peas and tofu. Cook until the peas are done about 5 minutes. Garnish with the fresh cilantro.

When I lived in Buffalo New York I used to make this dish quite often. It is simple and easy to make. This dish is great for brunch. Serve with English Muffins.
