Ingredients

  • 1/2 block firm tofu
  • 1 medium onion
  • 1/2  cup mushrooms diced fine
  • 1 cup spinach
  • 4 tablespoons Bacon bits, meatless
  • 1 dash salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon nutmeg
  • 1 cup grated Jarlsberg cheese
  • 1  Pie crust, refrigerated, regular, unbaked

Instructions

Preheat oven to 400.
Blend tofu in blender with a little water until it is smooth. Sauté onions and mushrooms in butter. Add spinach. Sauté until spinach is wilted.
Turn off heat add soy bacon bits. Add tofu, salt, pepper, nutmeg and Jarslberg cheese.
Pour into pie crust. Add more grated cheese on top. Sprinkle with nutmeg.
Bake for 30 minutes

I first made this dish in New York city in the seventies. It ’s still a very good dish. It’s very healthy.
