Indian Mexico Tacos

Ingredients
Blender
- 3 cups water
- 1 medium tomato
- 1 tablespoon ghee
- 1/4 tablespoon fresh ginger
- 3 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon cayenne
- 1 medium onion
- 3 cloves garlic
- dash of salt
- 1 tablespoon cumin seeds
Vegetables
- 1/2 cup mushrooms
- 1 bunch fresh spinach
- 5 medium potato
Garnish
- 10 sprigs fresh cilantro diced fine
- 1 tablespoon mango chutney
- 1/4 cup alfalfa sprouts
Tacos
- 4 tortilla corn tortillas
Instructions
In blender put 3 cups water, tomato, ginger, turmeric, coriander powder, cumin powder, garam masala, cayenne, onion, garlic and salt.
Blend until smooth. About 30 seconds.
In large frying pan put heaping 1 tablespoon ghee in pan.
Turn heat to medium and melt the ghee. Add in cumin seeds. When they starting popping after 15 seconds or so add the blender mixture.
Cook for a few minutes then add the vegetables. Cook until the vegetables are done about 10 minutes.
Heat corn tortillas in skillet. When heated fold over tortilla and add the potato filling.
Garnish with the fresh cilantro and mango chutney.

This is a fusion of East meets West. Mexico and India have similar ingredients yet the cuisine is so different. This taco combines the flavors of Mexico and India. Simple yet exotic.
