Ingredients

  • 2 1/2 cups plain Yogurt
  • 1 medium tomato diced fine
  • 1/4 cup diced onion
  • 3 leaves fresh mint
  • 1/2 medium Cucumber, peeled, raw diced fine
  • dash of salt
  • 1 teaspoon cumin seeds

Instructions

Turn on burner to high. Heat skillet.
Add cumin seeds and toast them until you can smell them. Do not burn them. It takes about 1 to 2 minutes when the pan is hot.
 
Us a mortar and pestle and grind the seeds up. You will use this as a garnish.
Put all the ingredients in a bowl except for the cumin seeds. Mix well.
 
Sprinkle the cumin seeds on top of the raita.

I ’ve been making this for 40 years and still haven’t got tired of this recipe. I first had this in India in the seventies. It ’s quite refreshing with a hot and spicy meal.
