Ingredients

  • 8 medium eggs
  • 1/4 cup milk
  • 3 large diced potatoes
  • 1 large zucchini
  • 1 medium diced onion
  • 3 cloves  diced garlic
  • dash of salt
  • 1/8 teaspoon pepper
  • 1/2 cup grated parmesan cheese
  • 1/8 teaspoon cayenne

Instructions

 
Preheat oven to broil broil
Cut up potatoes in small cubes. Boil in water until tender.
Sauté in olive oil the onions, garlic and zucchini until golden brown. Add the potatoes. Add salt, pepper and dash of cayenne.
Whisk eggs. Add salt and pepper to mixture. Add milk. Whisk.
In heavy cast iron pan add the potatoes mixture.
Pour the eggs over potatoes mixture. Put fresh grated parmesan cheese on top of mixture. Cook for 5 minutes on medium heat.
Put pan in broiler until top turns golden brown.

This is one of my favorite dishes for brunch. My friends and family love this recipe. It looks like an Italian Pizza.
