Arugula salad with Brie

Ingredients

  • 2 cups  arugula
  • 1 tablespoon olive oil
  • 1/2 tablespoon balsamic vinegar
  • 4 oz cheese 

Instructions

Arrange arugula on salad plates. Sprinkle olive oil and balsamic vinegar on salad. Add four slices of brie cheese to plate.
 

Comments

When I lived in Miami Beach in the 80’s my friend John and his step dad Martin would take me to a high class Italian restaurant and they would serve arugula salad. I loved the bitterness of the leaves with the olive oil and balsamic vinegar. Martin passed away about 10 years ago and this recipe is dedicated to him. We became good friends and windsurfing buddies.
