Ingredients

  • 4 tablespoons pesto sauce
  • 2 medium eggs
  • 2 muffin english muffins
  • 1/16 tablespoon red curry paste
  • 1 teaspoon olive oil
  • 4 ring red bell pepper

Instructions

If using homemade pesto sauce

Heat up skillet. Add olive oil and Thai curry paste. Mix paste into oil. When oil is hot add 2 eggs to the pan. Fry them to the way you like them. While eggs are frying spoon the pesto sauce on the muffin and spread evenly. Put your eggs on top of the pesto spread. Garnish with the roasted red bell pepper slices.
