Spanish rice with shrimp

Ingredients
- 1 tablespoon olive oil
- 1 medium onion chopped fine
- 3 cloves garlic
- 1 cups basmati rice
- 2 cups chicken stock
- 1 medium diced fresh tomato
- 1/4teaspoon saffron
- 28 large olives
- dash of salt
- 8 large cooked shrimp
Instructions
Sauté in olive oil the onions, garlic and tomato until they are golden brown.
Add the rice and cook for a few minutes until the grains turn a little brown.
Add stock of your choice and add the spices and cook until rice is done usually about 20 minutes. When rice is done add the olives and fluff the rice with a fork. Garnish with cooked shrimp.
