Ingredients

  • 4 medium eggs
  • 1/4 cup milk
  • 1/2 large diced zucchini
  • dash of salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon pepper
  • 1 teaspoon olive oil 

Instructions

In hot skillet sauté the zucchini in olive oil until the zucchini is golden brown.
Beat your eggs and milk together. Add your spices. Pour mixture on zucchini and stir constantly until the eggs are scrambled.
Serve with sourdough toast.
