Ingredients
- 1 fillet salmon
- 1 tablespoon red curry paste
- 1 teaspoon coconut oil
- 1/2 cup coconut milk
- 1/4 tablespoon fish sauce (optional)
- 1/8 tablespoon honey or palm sugar
- 1 large potato diced fine
- 1 cup spinach
- 1/4cup grated fresh green papaya
- 1 oz coconut flakes
Instructions
Preheat oven to 400
Boil potatoes for 6 to 10 minutes until they are tender. Drain and set aside.
Make red curry paste or store bought.

Heat up skillet. Add coconut oil. When oil is hot add red curry paste. Sauté for a few minutes and stir constantly.

Add coconut milk, spinach and green papaya. Sauté until spinach is wilted. Add potatoes.
Add a splash of fish oil and palm sugar or honey. Add peas and cover pan for 3 minutes.
Put salmon in cooking pan. Pour the red curry mixture over the salmon. Cook for 20 minutes with a cookie sheet over the pan.
While salmon is cooking do the following step:
In separate skillet toast the coconut flakes. Turn heat to high and stir constantly until the coconut flakes turn golden brown. Do not burn the coconut.

When salmon is done take out of oven.
Garnish with toasted coconut flakes.
