Broccoli with brown rice

Ingredients
- 1 cup brown rice
- 2 cups chicken broth
- 1/2 cup water
- dash of salt
- 1 bunch broccoli diced
- 1 tablespoon red curry paste
- 1 teaspoon coconut oil
- 1/4 cup water
- 2 teaspoon gomasio
Instructions
Make red curry paste or store bought.

Bring broth, 1/2 cup of water and salt to a boil. Add your brown rice. When it starts to boil again turn down heat and cover with lid. Simmer for 30 to 45 minutes until rice is done. Remove from heat and let sit for 5 minutes.
While rice is cooking, heat up skillet. When skillet is hot, add coconut oil. When oil is hot, add red curry paste and cook for a few minutes stirring constantly. Add 1/4 cup water and broccoli. Cook for two minutes. Take off burner and put a lid on the skillet. Let it sit for 5 minutes. Broccoli is done.
Add brown rice to the broccoli. Garnish with gomasio.
