Ingredients

  • 1 tablespoon green curry paste
  • 1 cup diced chicken breast
  • 1 tablespoon coconut oil
  • 1 tablespoon  ginger or galanga root
  • 3 tablespoons shallots
  • 3 cloves garlic
  • 1 tablespoon peanut butter
  • 1 teaspoon palm sugar or brown sugar(optional)
  • 1/4 tablespoon fish sauce
  • 5 tablespoons  fresh Basil
  • 1 cup spinach
  • 2 large corn on the cob
  • 1 cup chicken broth
  • 1/4 cup diced fresh coriander

Instructions

Heat up skillet. When skillet is hot add the coconut oil. Sauté the galanga root, garlic and the red shallots. When mixture is golden brown add the peanut butter, broth and fish sauce.
 
Stir and incorporate the peanut butter. Add your chicken and cook for a few minutes.
 
Add your basil, fresh corn, and spinach. Simmer for around 15 minutes or so. Garnish with fresh cilantro.

Here’s a quick Thai chicken soup made with fresh green curry paste, fresh basil, spinach and corn. You can omit the chicken for vegetarians.
