Vietnamese tomato paste rice

Ingredients
- 1 cup brown rice
- 2 cups water
- 2 tablespoons tomato paste
- 2 tablespoons shallots chopped
- 3 cloves garlic diced
- 1 teaspoon fresh diced ginger
- 1 cup string beans diced fine
- 1 tablespoon coconut oil
- 1 dash Salt
- 1/4 teaspoon White pepper
- 1/8 teaspoon 5 star anise
- 3 teaspoons sriracha hot chili sauce
- 1/4 tablespoon fish sauce
Instructions
Boil water. Add tomato paste, stir until paste is dissolved in water. Add rice and a dash of fish sauce. Simmer for 30 minutes or until rice is done.
Heat up skillet. When skillet is hot add coconut oil. Sauté the shallots, ginger and garlic until they are golden brown. Add the star anise and a splash of fish sauce or braggs liquid aminios. Add string beans, Vietnamese Chili Garlic Sauce and 1/4 cup water and simmer for 5 minutes. Put a cover over the skillet when simmering the string beans. Add salt and pepper to taste. Add fresh basil, fresh mint and fresh cilantro.
Place rice on serving platter. Spoon string bean mixture over rice.
