Ingredients

  • 1 tablespoon coconut oil
  • 1 medium onion diced
  • 3 cloves garlic
  • 1 teaspoon fresh ginger
  • 5 cups CAMPBELL Soup Company, SWANSON BROTH, Vegetable Broth
  • 1 teaspoon brown sugar or palm sugar
  • 1/8 cup tamarind
  • 3 teaspoons sriracha hot chili sauce
  • 1 cup diced pineapple
  • 1 cup diced plum tomato
Garnish
  • 1 cup mung beans
  • 1 whole fresh lime juice
  • 1 tablespoon diced fresh mint
  • 4 tablespoons  diced fresh basil
  • 10 sprigs diced cilantro
  • 1 tablespoon diced scallions

Instructions

Heat up soup pot. Add the coconut oil. When oil is hot add the onion, garlic and ginger. Sauté until golden brown. Add your stock, palm sugar, tamarind paste,
Vietnamese Chili Garlic Sauce, pineapple and plum tomatoes. Simmer for 20 minutes. 
 
When soup is done place soup in servings bowls and add garnish. Put juice of 1/2 lime over each serving of soup.
