Vietnamese avocado cucumber spring rolls

Ingredients
- 6 wrap Vietnamese Rice Paper
- 1 whole sliced avocado lengthwise strips
- 1/4 cup sliced cucumber lengthwise strips
- 1 cup bean sprouts
- 8 fresh basil leaves
- 6 leaves fresh mint
- 1/4 cup diced fresh cilantro
Dipping sauce
- 4 tablespoons hoisin sauce
- 1/4 cup water
- 1 tablespoon peanut butter
- 3 teaspoons sriracha hot chili sauce
Instructions
Mix all dipping sauce ingredients in bowl.
Take 1 rice wrapper and place in a pan that has some hot water in it. When the rice paper becomes pliable take out of the water and place on chopping board. Put some of each of the ingredients on the sheet of rice paper and gently roll up by folding ends in first and then rolling carefully. Make sure you roll it nice and tight.
Place on serving plate. Serve with the hoisin sauce for dipping.
