Green pepper curry

Ingredients
- 1 medium onion diced fine
- 2 cups green peppers diced fine
- 3 roma red tomatoes diced fine
- 3 whole green chili peppers diced fine
- 1 cup Greek yogurt
- 1 tablespoon coconut oil
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1 tablespoon cumin powder
- 1 teaspoon cayenne
- salt to taste
Instructions
Heat up pan. When pan is hot add coconut oil. When oil is hot add onions. Sauté until onions are golden brown. Add green peppers, spices and tomatoes. Turn down heat and simmer for 10 minutes or until green peppers are done. You want a little crunch to them.
Take off heat and add yogurt. Stir until yogurt becomes a sauce.
