Ingredients

  • 1 cup package polenta
  • 1 large zucchini sliced thin
  • 1 medium onion sliced thin
  • 2 tablespoon olive oil
  • salt to taste
  • 1 teaspoon paprika
  • 1 teaspoon  star anise
  • 8 oz shredded goat cheese

Instructions

Preheat oven to 425
Add all ingredients to bowl. Mix until everything is coated with oil and spices. Put on cookie sheet and bake for 20 minutes.
