Carrot soup with coconut milk

Ingredients

  • 2 large diced carrots
  • 1 medium diced onion
  • 1 teaspoon diced fresh ginger
  • 1 teaspoon curry powder
  • 1 cup chicken broth
  • 1 cup coconut milk
  • sea salt to taste
  • 1/8 teaspoon white pepper
  • 1 teaspoon 5 star anise
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg

Instructions

Add all ingredients to pot. Bring to a boil and simmer for around 7 minutes.
In several  batches blend the mixture into a puree in a blender. Put back to pot and simmer for another 3 minutes.

My wife loves this soup. It is a version I got from Whole Foods.
