Quinoa with peas

Ingredients
- 1 cup quinoa
- 1 cup peas
- 2 cups coconut milk
- dash of salt
- 1 teaspoon mustard seeds
- 6 leaves curry leaves
- 1/2 medium onion diced
- 3 cloves garlic diced fine
- 1/2 whole jalapeno pepper diced fine
Instructions
Rinse quinoa. Add quinoa and coconut milk to pan. Bring to a boil. Turn down heat and simmer for 15 minutes.
While quinoa is cooking heat up skillet. When skillet is hot add coconut oil. When oil is hot add the mustard seeds and curry leaves. When mustard seeds begin to pop add the onions, garlic and jalapeno pepper. Sauté until golden brown. Take off burner.
When quinoa is done add the mustard seed mixture to quinoa. Add the peas and a dash of salt.

This is a variation of a recipe my friend Mohan brought to work. It is a Southern Indian version of quinoa.
