Quinoa with red peppers

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 medium diced potato
  • 3 tablespoons ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seed
  • 1 small diced onion
  • 3 clove diced garlic
  • 1 medium diced red pepper
  • 1 whole juiced lime
  • 5 leaves curry leaves

Instructions


Add diced potato to pot. Add water. Bring to boil and simmer for 7 to 10 minutes
or until potatoes are done. Drain the water.

In separate pot add the quinoa and 2 cups water. Bring to a boil.
Simmer for 15 minutes.

Heat up skillet. When skillet is hot add the ghee. When the ghee
is hot add the mustard seeds, cumin seeds and curry leaves. When the seeds
start popping add the onions and garlic. Sauté until golden brown.
Add the diced red pepper. Sauté until it’s done.
Add the potatoes and onion mixture to the quinoa. Add the lime juice.
