Ingredients

  • 12 corn tortillas
  • 1 medium onion  chopped
  • 3 cloves  garlic minced
  • 1 cup hot sauce
  • 1 tablespoon apple cider vinegar
  • 4 teaspoon olive oil
  • 8 oz  jarlsberg cheese
  • 6 slice Havarti Cheese
  • 2 tablespoons scallions
  • 24 large olives
  • 1 tablespoon cumin powder
  • 1 teaspoon salt
  • 1/4 cup cilantro
  • 1 cup pinto beans
  • 1 cup kidney beans

Instructions

Preheat oven to bake 350
Sauté olive oil, onions and garlic until they are brown.
 
Put the beans in a colander and rinse with water.

Add the beans. Add cumin powder and vinegar. Add salt. Cook for 3 minutes.
Add the can of hot sauce into the bean mixture. Add the olives, cheese, and cilantro and tortillas.
 
 
Bake at 350 for 20 minutes.
