Zucchini corn pasta dish

Ingredients

  • 2 cups Noodles, egg, dry, unenriched
  • 1 teaspoon olive oil
  • 2 large zucchini
  • 1 cup corn
  • 1 teaspoon turmeric
  • 1 cup grated jarlsberg cheese
  • 1 tablespoon Bacon bits, meatless
  • 1 teaspoon sriracha hot chili sauce
  • 1/4 cup sauerkraut
  • dash of salt

Instructions


Add water to pan. Turn on heat to high and bring to a boil. Add your pasta and cook for 5 minutes or until done.
Heat up skillet. When skillet is hot add your olive oil. Add your zucchini and sauté until they are golden brown. Add your corn and sauté for a minute. Add your salt, chili paste and turmeric.
When pasta is done pour pasta into a colander. Pour pasta back into the pan and add the zucchini mixture. Add the cheese, bacon bits, and sauerkraut. Mix until the cheese is melted

This is a quick dish to make for dinner. It’s very tasty.
