Ingredients
- 2 fillet mahi mahi
- 1/4 cup diced onion
- 2 cloves garlic
- 1/4 cup miso
- 1 teaspoon olive oil
- 1/4 cup fresh lemon grass
- 1 teaspoon mustard seed
- 1/2 teaspoon coriander seed
- 1/4 cup coconut milk
- 2 roll Rolls, dinner, whole-wheat
- 1/2 tablespoon mayonnaise
- 10 leaf spinach
Instructions
Heat up skillet. When skillet is hot add your olive oil. When oil is hot add the mustard seeds and coriander seeds. When seeds start to pop add the onion and garlic. Sauté until golden brown. Add the miso and stir. Add the coconut milk. When it boils turn down heat. Add the fish and simmer for 5 minutes or until done.
Cut the bread in half. On one side spread mayonnaise on bread. Add the fish fillet and some of the sauce. Garnish with fresh spinach.

This is a great tasting sandwich. It’s way better than any fish sandwich at McDonald ’s
