Ingredients

Filling
  • 1/2 block  tofu
  • 2 oz carob chips
  • 2 medium eggs
  • 1/4 cup sugar or stevia
  • 1 whole fresh lemon juice
  • 3/4 tsp. vanilla
Crust:
  • 1 1/2 cup crushed Graham Crackers
  • 1/4 cup melted butter

 

Instructions

Crust
 Preheat oven to 375.
 Put half of the box of Graham crackers into the blender. Blend until finely ground. Measure out 1 1/2 cups into a medium bowl. Stir together the crumbs and then evenly pour the melted butter into the mixture. Stir using a fork until everything is evenly blended. Pour crust mixture into a 9 inch pan. Press it evenly around the bottom and inch up the sides until an even layer is formed. Set aside.
Filling
Blend tofu, eggs, stevia, lemon juice and vanilla until smooth. Add your carob chips and then pour into crust.
 
Spread evenly.
Bake 350 for around 25 to 30 minutes.
 

Comments

This is not your typical tofu recipe. Its very good. I first made tofu tofu cheesecake in New York City in the seventies.
