Ingredients

  • 1 carton veggie chicken broth
  • 1 large potato
  • 1 whole avocado
  • 2 cups coconut milk
  • 1 medium diced onion
  • 3 cloves garlic
  • 1 tablespoon curry powder
  • 1 teaspoon cumin powder
  • 1 teaspoon nutmeg
  • 1 tablespoon tamari
  • 1 tablespoon olive oil
 

Instructions

Sauté onions and garlic in olive oil. Add the rest of ingredients except for the avocado. Use a whisk and mix the coconut milk is blended smoothly. Bring to a boil and simmer for around 7 minutes.
 
Garnish with cilantro and avocado cut in cubes.

This is a mixture of Indian and Mexican. Potatoes and avocado in a soup.
