Pesto scrambled eggs

Ingredients
- 2 medium potatoes
- 1 medium onion
- 3 cloves garlic
- 1 teaspoon paprika
- 1 dash salt
- 1 teaspoon black pepper
- 4 medium eggs
- 1 teaspoon olive oil
- 1 cup cauliflower diced
- 1 medium zucchini
- 1/2 cup Parmesan cheese
Pesto sauce
- 1 tablespoon olive
- 5 basil leaves
- 1/4 oz pine nuts
Instructions
Add pesto ingredients to blender. Blend
Heat up sauce pan will water. When water boils add the potatoes and cook until done. About 10 minutes. Drain water.
Heat up skillet. Add the olive oil. When oil is hot add the garlic and onions. Sauté until golden brown. Add the zucchini and cauliflower. Sauté until golden brown.
Add the spices. Beat the eggs and add to the vegetable mixture. Stir constantly until the eggs are scrambled. When eggs are done add the pesto sauce and freshly grated parmesan cheese. Stir until cheese is melted.

This is great for brunch. I love the flavor of pesto sauce, vegetables and eggs.
