Ingredients

Ingredients

  • 4 thigh without skin chicken thigh
  • 1/2 medium onion
  • 1 teaspoon olive oil
  • 1/2 cup pomegranates
  • 1 tablespoon  bay leaf
  • 1 cup walnuts 
  • 1/4 cup water
  • 1 dash salt

Garnish

  • 1/4 cup spinach
  • 1/4 cup arugula

Instructions

Heat up skillet. Add olive oil. When oil is hot sauté the onion for a few minutes. Add the crushed bay leaves. Add the chicken and sauté for a few minutes. Add 1/4 water and the pomegranate seeds and juice. Cover and simmer for 15 minutes.
Heat up skillet. Add the walnuts and roast them for a few minutes. Do not burn them. Take off heat and let them cool down. Put in blender and pulse 2 or 3 times. Do not blend too much or the walnuts will turn into a paste. You want the walnuts to be crushed. Add this mixture to the chicken and stir. Simmer for a few more minutes. Add salt. Garnish with fresh spinach and arugula.

The Persians really know how to cook. This is a very tasty and nutritious dish.
