Potato cabbage caserole

Ingredients

Ingredients

  • 2 cups mashed potatoes
  • 1 large diced cabbage
  • 1/2 tablespoon ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 2 large red bell pepper
  • 1 cup pearled Barley
  • 1/4 cup water
  • 1/8 teaspoon  saffron 
  • 8 oz grated goat cheese

Instructions

Pre heat oven to broil
Place the green and red peppers on cookie sheet and broil for around 20 minutes. Turn them over around 10 minutes. When skins are blackened take them out of oven and place in paper bag. Let them sit for around 15 minutes.
Turn down oven to 375.
In separate pan add the pearl barley and 1 3/4 cup water. Bring to a boil and cook for around 8 to 10 minutes until barley is done.
 
In small saucepan heat up 1/4 cup water. When water boils add the saffron and take off burner.
Heat up skillet. Add the ghee. When the ghee is hot add the mustard seeds. When the seeds begin to pop add the cabbage and sauté for a few minutes until the cabbage is cooked. Add the paprika, turmeric, cumin powder, coriander powder and salt. Add the saffron water. Add the mashed potatoes.
Peel the skins off the peppers and chop them up. Grate the goat cheese.
In a casserole pan add the pearl barley to the bottom of the pan and spread over bottom of the pan.
Spread the cabbage mixture on top of the pearl barley. Place the peppers on top of the cabbage mixture. Spread the goat cheese on top.
Bake for 25 to 30 minutes until the cheese is melted and is golden brown.

This is a great dish to make when you have left over mashed potatoes.
