Ingredients

Ingredients

  • 1/2 medium onion
  • 3 cloves garlic
  • 1 medium zucchini
  • 1 medium tomato
  • 1 teaspoon cumin seeds
  • 1/16 cup tamarind
  • 3 leaves curry leaves
  • 15 large shrimp
  • 1 tablespoon Kecap Manis
  • 1 bottle dos equis beer
  • 1 teaspoon coconut oil
 

Instructions

Heat up pan. Add coconut oil. Add the cumin seeds and when they start to pop add the onions, curry leaves and garlic. Sauté until they are golden brown. Add the tomatoes and zucchini. Sauté for a few minutes. Add the shrimp, beer and Kecap Manis sauce. Bring to a boil and let it simmer for 10 minutes.

I love the different flavors in this dish. I combine Mexican and Indian flavors in this soup.
