Ingredients

Ingredients

  • 1/2 medium onion
  • 3 cloves garlic
  • 1 teaspoon fresh ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon coconut oil
  • 1 cup spinach
  • 10 large shrimp
  • 1 tablespoon peanut butter
  • 1 teaspoon coconut oil
  • 1 tablespoon curry powder
 

Omelet mixture

  • 3 large eggs
  • 1/4 cup coconut milk
  • 1/2 tablespoon kecap manis
 

Instructions

Heat up pan. When pan it hot add the coconut oil. Add the cumin seeds. When they start to pop add the onions, fresh ginger, and garlic. Sauté until they are golden brown. Add the spinach, curry powder and peanut butter. Sauté until the spinach is done.
 
 
In a glass bowl add the omelet ingredients. Whisk until the eggs are mixed together. In an omelet pan add the olive oil and egg mixture. Cook on a low heat until the eggs are done. Flip over and cook for a few minutes. Add the shrimp and spinach mixture over one side of the omelet. Fold in half and serve.
 

Comments

This is a very different omelet using eggs, coconut milk and kecap manis for the egg mixture. I love the mixture of spinach, shrimp and peanut butter.
