Ingredients
Ingredients
- 2 cups water
- 3 cloves garlic
- 1 medium tomato
- 1 tablespoon coconut oil
- 1 teaspoon fresh ginger
- 3 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1 teaspoon cayenne
- 1 medium onion
- dash of salt
- 1 tablespoon cumin seeds
- 1/16 cup tamarind
- 1 fillet grouper
- 1 large zucchini
Instructions
In blender put 2 cups water, tomato, ginger, turmeric, coriander powder, cumin powder, garam masala, cayenne, onion, garlic and salt.
Blend until smooth. About 30 seconds.
In large frying pan put heaping 1 tablespoon coconut oil in pan.
Turn heat to medium and melt the ghee. Add in cumin seeds. When they start popping after 15 seconds or so add the blender mixture.
Cook for a few minutes then add the zucchini and the grouper. Cook until the fish and vegetables are done. Takes about 10 minutes. Garnish with the fresh cilantro.
