Ingredients

Ingredients

  • 16 oz Lamb, Australian, imported, fresh, separable fat, raw
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 large onion
  • 2 cloves garlic
  • 1 tablespoon pepper
  • 1 cup mushrooms
  • 1 cup spinach
  • pinch of salt
  • 4 fl oz Alcoholic Beverage, wine, table, red, Burgundy
  • 1 tbsp fresh Rosemary
 

Instructions

Preheat oven to 375
Place the pepper and salt on a plate. Place the rosemary in a coffee grinder. Blend until smooth. Place the rosemary on the plate and mix the spices together. Place the lamb on the spice mixture and turn it over. Completely cover both sides of the lamb with the mixture.
 
Heat up pan. When pan is hot add the olive oil. Search the meat for 2 minutes on one side and two minutes on the other side. Place the meat on a plate and set aside. Add the butter and sauté the onions and garlic until they are translucent. Add the mushrooms and spinach and cook until the spinach is cooked. Add the sherry. Place the lamb in the pan. Cover the iron skillet and place in the oven for 15 minutes.
 
 
Take out of oven and let it rest for 5 minutes.

Comments

Seared lamb with rosemary and wine. The spinach and mushrooms are a great match together.
