Ingredients

  • 1 bunch fresh spinach
  • 1/2 cup  feta cheese
  • 20 large black olives
  • 1/4 cup olive oil
  • 1 whole fresh Lemon juice
  • 1 clove garlic
  • dash  of salt
  • 1/8 teaspoon pepper

Instructions

Wash spinach leaves. Dry. Cut up. Add crumbled feta cheese, chopped tomatoes and kalamata olives.
Mix olive oil, lemon juice, crushed garlic, salt, and pepper in a jar.
Pour dressing over salad. Serve.
 

Comments

I love this salad. It’s simple and delicious. I first made this salad in New York City in 1977. I was introduced to Greek cooking and Middle Eastern in general.
