Ingredients

Crust:
  • 1 1/2 cup  Graham Crackers
  • 1/4 cup melted butter
  • 1/4 cup sugar

Filling:
  • 3 oz cream cheese
  • 12 teaspoons stevia
  • 3 large eggs
  • 1 tsp. pure vanilla extract

Sour cream topping:
  • 2 cups sour cream
  • 6 teaspoons stevia
  • 1 tsp. pure vanilla extract

Instructions

Crust
Preheat oven to 375.
Put half of the box of Graham crackers into the bowl of a food processor fitted with a steel blade. Pulse until finely ground. Measure out 1 1/2 cups into a medium d bowl. Stir together the crumbs and the sugar, and then evenly pour the melted butter into the mixture. Stir using a fork until everything is evenly blended. Pour crust mixture into a 9 inch spring form pan. Press it evenly around the bottom and inch up the sides until an even layer is formed. (I used the bottom of a cup for this) Set aside.
 Filling
 Add cream cheese, sugar, eggs and vanilla to Cuisinart. Pulse until mixture is light and airy.
 
 
 
Bake at 375 for 30 minutes or until done. Take out of oven and cool for 5 minutes.
 
Sour Cream Topping
 
Mix in bowl sour cream, sugar and vanilla.
 
Pour over cheese cake. Bake for 10 minutes.
 
Cool for 1 hour then put in refrigerator

This was one of my favorite’s deserts when I was a kid. When I lived in New York City I used to make this a lot. I like my version better than the dry version in New York. I like a light and airy cheese cake.
