Ingredients

  • 1 tablespoon Olive Oil
  • 12 tortilla corn tortillas
  • 1 medium onion chopped
  • 3 cloves garlic  minced
  • 1 can (6 oz)  tomato paste
  • 4 cups water
  • 1 tablespoon apple cider vinegar
  • 16 oz jarlsberg cheese
  • 2 stalk sliced scallions
  • 28 large sliced olives
  • 1 tablespoon cumin powder
  • 1 teaspoon salt
  • 1/4 cup cilantro
  • 1 cup mushrooms
  • 1 cup fresh green beans

Instructions

Preheat oven to bake 350
Make sauce
Sauté olive oil, onions and garlic until they are brown.
Add tomato paste plus 3 cups water. Add coriander powder and vinegar. Add salt. Cook for 15 minutes.
Add corn, fresh green beans, grated Jarlsberg cheese and cilantro. Add mushrooms, tortillas cut up into triangles, and black olives.
Put in casserole pan and bake at 350 for 30 minutes.

I made this up with the leftovers in the fridge about 25 years ago. I still make this dish today.
