Ingredients

  • 1 cup sushi rice 
  • 1 tablespoon rice vinegar
  • 1 tablespoon Pickled Ginger
  • 1 teaspoon sugar
  • dash of salt
  • 12 piece inari wrappers 
  • 1 teaspoon soy sauce    

Instructions

Hollow out tofu to make a pocket-Pita bread style.
Heat water, soy sauce, sugar until it boils.
Soak age tofu in mixture for a few hours.
Add 1 cup rice and 2 cups water and bring to boil. Cook for 20 minutes.
Add rice vinegar, sugar, salt to rice.
Stuff age tofu with rice mixture.

 I first was introduced to Japanese food during the eighties. I was living in Miami Beach and loved going to the Japanese restaurants. I love how Japanese food is art and food at the same time.
