Tofu sloppy joes

Ingredients

4 muffin English muffins
1 block mashed Tofu
1/4 cup diced Onion
1 clove diced Garlic
1/4 cup Tomato sauce
1/4 cup barbecue Sauce
1 cup Mozzarella cheese
1 cup Fresh parmesan cheese
 
 

Instructions

Pre heat oven to broil
Mash tofu.
Sauté onion and garlic in frying pan.
Add tofu.
Sauté until most of the moisture from the tofu has evaporated.
Add tomatoes sauce and BBQ sauce.
Cook on low for 10 minutes.
Toast English muffins.
Put sauce on top.
Top with mozzarella cheese and fresh parmesan cheese.
Broil until cheese melts.

This is a different twist on your sloppy joes. I first made this while living in Miami Beach during the eighties. It’s a nice and healthy version. 30 years later I still love this recipe.
