Ingredients

  • 2 cups coconut milk
  • 1 heaping tablespoon yellow curry paste
  • 1 medium onion
  • 1 tablespoon Thai ginger
  • 3 large diced potatoes
  • 2 cups peas
  • 2 cups wheat gluten
  • dash  of salt
  • 1 cup bean sprouts
  • 10 sprigs fresh cilantro diced fine

Instructions

 
Dice onions. Sauté in ghee until onions turn brown.
Add all the spices and sauté for a few minutes.
Add the coconut milk and turn heat to medium. Add the chopped potatoes and Thai ginger. Cook until the potatoes are tender.
Add the peas and wheat gluten and cook for two are three minutes. Don ’t overcook the peas. Add salt.
Before serving add fresh beans sprouts .Garnish with fresh coriander.

I first made this dish in Hawaii during the nineties. It was nice to eat after a days surfing.
