Ingredients
2 eggplants, grilled or baked
2 - 3 Thai chili peppers, chopped
Soy sauce/tamari, to taste
Lime juice, to taste
Instructions
- Bake or grilled the eggplants until the inside is soft but not mushy.
- Mix the chili peppers, soy sauce and lime juce together.
- Peel off and discard the skin of the eggplants.
- Pour the sauce mixture onto the softened flesh of the eggplants and mix thoroughly.
- Serve on rice for lunch or dinner.
