Ingredients
- 8 medium eggs
- 3 large diced potatoes
- 1 large zucchini
- 1 medium diced onion
- 3 cloves diced garlic
- 1 dash salt
- 1/8 teaspoon saffron
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seed
Instructions
Pre heat oven to broil broil
Boil 1/4 cup water. Add pinch of saffron. Set aside.
Cut Up potatoes in small cubes. Boil in water until tender.
Heat up skillet. add 1 heaping tablespoon ghee. Add the seeds and cook until they pop. Add the onions, garlic, tomatoes, and zucchini. Sauté until they are golden brown. Add the potatoes and saffron water.
Whisk Eggs. In heavy cask iron pan add the potatoes mixture.
Pour the eggs over potatoes mixture. Cook for 5 minutes on medium heat.
Put pan in broiler until top turns golden brown.
Comments
This dish combine Italian flavors and Indian flavors. The saffron gives the dish a subtle enhancement. So far I have never had anyone not like this dish. I’ve been serving this dish for over 25 years.
